Ratatouille

If you are looking for a healthy side to any meal that is vegan, and full of flavor. Look no further! This recipe has become a family favorite and is super easy to make!

INGREDIENTS

Vegetables needed for Ratatouille

2 zucchini

1 LG onion

1 sm eggplant

4 LG ripe heirloom tomatoes

4 LG cloves of garlic

2 tbsp extra virgin olive oil

1/2 tsp kosher salt

1 tbsp herbes de Provence

CUT ALL INGREDIENTS INTO BITE SIZE PIECES

Bite size veggies in Ratatouille

DIRECTIONS

Preheat oven to 400°F and lightly greese a 9×13 baking dish

Put all ingredients into a large bowl and toss.

Roast until veggies are tender and lightly browned around 30-45 min.

Serve warm and enjoy!!!
