
Chicken, Mediterranean Rice, and Wrap

My entire family absolutely fell in love with this wrap, as well as the rice. It’s simple, healthy, full of flavor and jam packed with nutrition.
Let’s start off with making the rice first. For the Mediterranean Rice…

INGREDIENTS
1 cup Balsamic Rice
1 medium carrots shredded
7 kalamata olives, sliced
1 stalk of celery diced
1 Cucumber diced
1 yellow bell pepper diced
1 tbsp olive oil
1/4 tsp cumin
1/4 tsp dill
1/4 tsp sumac for garnish
DIRECTIONS
Cook rice
Add all ingredients and mix
Top with sumac

CHICKEN
Bake your chicken at 375° skin on for 20 min, flip and bake until skin is browned and crispy (about 10 min-15) and chicken is done
I added tumeric, garlic powder, and salt for flavor before baking
INGREDIENTS
4 Corn on the cob
DIRECTIONS
Boil the corn until tender
Let cool
Grill until browned and remove from heat
Cut off all corn from the cobs and place in a medium skillet over medium high heat.
(Place in medium bowl and set aside)
PERSIAN WRAP


INGREDIENTS
Tonir Lavash (flat bread for wraps) found at middle eastern groceries
Roasted corn
1 Cucumber shredded
1 Carrot shredded
2 Tomatoes diced
1/4 cup Red Cabbage shredded
1 piece of baked chicken Shredded
Pickled turnips (found at middle eastern store)
Kalamata olives halved (3 for each wrap)
Garlic hummus
Feta crumbles
DIRECTIONS
Align each ingredient
Use hummus as last at end of wrap, it will also make wrap hold together better
Roll wrap with all ingredients, add roasted corn, chicken, and Mediterranean Rice to plate, serve and enjoy!!
