
If you are looking for meatless chili, going vegan, don’t know where to start, or looking for something savory and sweet to try, you have come to the right place. This sweet Vegan Quinoa Chili is the bomb 💣.


INGREDIENTS
1 white or yellow onion, diced
4 cups vegetable broth
3 sweet potatoes ( I love the white sweet potatoes best in this dish)
1 tsp garlic powder
1 tsp sea salt
3 tbsp chili powder
1/2 tsp black pepper
3 tsp cumin
1/2 – 1 cup quinoa (uncooked) if you want thicker chili put more quinoa, if you want less thick use less quinoa)
1 can kidney beans (rinsed)
1 can black beans (rinsed)
1 can sweet corn
1 cinnamon stick

DIRECTIONS
Start by sautéing the diced onions, and add the garlic powder, cumin, salt and pepper, mix well and sauté for 2-3 min
Get a pot and add in the broth and all ingredients and bring to a boil, then lower heat to simmer and continue to cook for about 30 minutes and until sweet potato is fork tender and chili is thick.
For toppings you can add avocado, mint, basil, anything you’d like, even cornbread on the side if you’d like!
