Edamame Quinoa Salad

This is a healthy and delicious quinoa salad that can easily be a main course. I found the recipe via Better Homes & Gardens. It’s very simple to make as well as filling, and not too heavy.

INGREDIENTS

Ingredients used in Edamame Quinoa Salad

½ cup quinoa, rinsed and drained

1 cup frozen shelled edamame, thawed

1 cup frozen whole kernel corn, thawed

½ cup cherry tomatoes, halved or quartered

¼ cup chopped fresh cilantro

¼ cup lime juice

2 tablespoon olive oil

DIRECTIONS

Lime and Cilantro

Cook quinoa according to directions (1 cup of water to 1/2 cup quinoa)

While the quinoa is cooking, put all the ingredients in a large bowl and combine the edamame, corn, cherry tomatoes, and cilantro.

Add quinoa; toss to combine.

Add 1/4 cup of lime juice and olive oil; toss to coat.

Season to taste with salt and pepper.

Serve and enjoy!
