I took a much-needed break during the holidays with all the hustle and bustle in life. We are now back to making food!!
Spanish Rice! A dish I love ❤️ but sadly could not always seem to get right. Until I kept trying through trial and error and finally did! And now I’m gonna share with you how to get some of the most delicious Spanish rice I’ve had!
I’ve also added a video below of the recipe I’ll be sharing in the making.
What you need…
INGREDIENTS
1 tbsp tomato paste (adjust if needed for quanity)
1/2 diced red onion
3 cloves minced garlic
1/2 shredded carrot
1/2 bulb grated raw tumeric or 1/2-1 tsp powdered
3 mini bell peppers, I used 1 red, 1 yellow, and 1 orange/diced (you can use 1/2 of and bell pepper of choice)
1 diced jalapeño
1 diced tomato
2/8 tsp or few pinches of cumin powder
1/2 tsp sea salt (start light)
1/2 tsp black pepper
1 cup long grain rice
2 tbsp oil of your choice
1 cup of water (to start)
1 cup veggie broth (or broth of choice)
1/2 tsp chkn bullion
Few dashes of hotsauce of your choice. I use Cholula and or Valentina.
DIRECTIONS
• First dice all of your fresh ingredients up and set aside

• Add 1-2 tbsp of vegetable oil to getting pan and heat up
• Add your long grain rice and pan fry until golden brown
• Add the tomato paste to the rice and mix in well like in the video above and photos below.



• Add 1 cup of water, 1 cup broth and mix well
• Stir in the diced veggies, mix well
• Add the salt, pepper, cumin, bullion and rest of the ingredients

• bring to a rapid boil, reduce heat, place on lid and simmer
Stir occasionally, add water and or broth if needed until rice is fluffy and done… it will fill up the entire pan, so be sure to use a good size pan or pot to start.
Once done, pair with tacos, a lime to squeeze, some cilantro, serve hot and enjoy!!
