If you are looking for something quick, light, healthy, and delicious,  you’ve definitely landed on the right page and post!

This salad is a family favorite and only takes a few items and can be prepped, prepared and ready to eat in under 15 minutes!

INGREDIENTS

( Feeds 4 )

2 heads of romaine, 1/4 head of iceberg (chopped)

1 can of diced tomatoes

3 Roma tomatoes diced

1 can of black beans

1/2 red onion diced

1/4 cup chopped fresh cilantro

1 can of corn

1 lb ground turkey or meat of choice

1/4 tsp cumin

1/2 tsp garlic powder

1/4 tsp onion powder

1 tsp tumeric powder

Dash of cayenne pepper

Dash of black pepper

1/2 – 1 tsp salt

5 Baby Bella mushrooms sliced

1 tbsp olive oil

DIRECTIONS

• In a large mixing bowl add your chopped romaine and iceberg lettuce

• put 1 tbsp of olive oil in a pan on medium hi heat

• place your turkey in the pan with the olive oil and turn heat down to medium, and add all the seasonings above into the turkey

• top your lettuce with sliced mushrooms around the edge of bowl like in the photo above

• once the turkey is done, add it to the top of the salad in the center, and add 80% of the chopped cilantro on top and evenly spread out (save the rest for the toppong)

• rinse and drain the canned tomatoes, then add on top of the ground meat, then add the freshly diced Roma tomatoes into the diced and spread evenly on top of the cilantro and meat

• drain and add the corn on top of the tomatoes

• rinse and drain the back beans and add on top

• Top with the remainder of cilantro

You can top with sliced avocado as well! (Optional)

I drizzled it with Ranch, and 2 of my favorite hot sauces together!
