
Hello! Welcome to, and or welcome back to my blog! It’s been a minute since I’ve posted, as I got caught up in the hustle and bustle of daily life.
I want to take a moment to talk about Nice Cream…
Never have I ever been so pleased with a recipe I tried on the first go! It’s so easy, and simple to make, and has become a fast summer favorite around our home.
The recipe I found and used is from a recipe influencer that goes by the name of lesswithlaur on Instagram, (You can follow her by clicking her name) and it was for Mango Nice Cream. I shopped around all the mango nice cream recipes from different influencers’ before I made a final decision on which to make, and I didn’t want to be disappointed.
I realized I didn’t have enough mangos, so I substituted strawberries for 1 cup and mango on the other cup, equal split. 😋 It was divine to say the least. So, I am gonna share the recipe the way I made it, and if you want just mango like the original recipe, I’m sure it’s amazing too, I haven’t been able to try it yet.
INGREDIENTS
1 cup frozen cubed mango (I used fresh mango, cubed then frozen overnight, and then froze the mango skin to hold the Nice Cream)
1 cup frozen de-stemmed strawberries
1/3 cup blueberries (optional)
1 cup coconut milk
1 tbsp vanilla extract
2 tbsp honey
2 tbsp olive oil
Dash of sea salt
Sprig of fresh mint (optional)

DIRECTIONS
Add 1 cup of coconut milk to blender
Add 1 cup frozen mango
Add one cup of frozen strawberries
Add 1 tbsp vanilla extract
Add 2 tbsp honey
Add 2 tbsp extra virgin olive oil
Add a dash of sea salt
Blend on high for 1 minute
Blend on medium for 30 sec to 1 min until done
The Nice Cream should have a thick and creamy texture
Spoon the Nice Cream into any container that will fit into your freezer and you can scoop from to freeze about 3-4 hrs, it will be simular to the texture of ice cream, and or frozen yogurt.
Get out your frozen mango skins, place in a bowl, scoop your Nice Cream into them, add fresh blueberries (optional) add, a sprig of mint too if you’d like (optional).
Serve and enjoy!
Can keep frozen,stored, and eat within 48 hrs for best results.
