Creamy Cauliflower Soup

Hello and welcome back to ANEWdawn blog. A recipe blog that I place my favorite family recipes.

This creamy Cauliflower Soup is an absolute game changer with only a handful of ingredients, you can not go wrong with this one!

Let’s get straight to it as I’m not one for unnecessary words.

INGREDIENTS

1 large head of cauliflower

2 leeks

1 medium white or yellow onion

2 green onions

1/2 stick of butter

Balsamic Vinegar

Salt and pepper to taste

2 tsp olive oil

DIRECTIONS

  • Cut 1/3 of the cauliflower into tiny pieces
  • Add to skillet with 1/2 stick of butter 🧈
  • Sautee until tender
  • Add the balsamic vinegar and cook until it glazed into the cauliflower and set aside (this is your topping)
  • Cut your leeks into slices
  • Cut your onion and green onion seperate and set aside
  • Take the pot your going to be cooking your soup in, add 2 tsp of olive oil or a little more to Sautee your leeks and white onion until translucent
  • Add 8 cups of water to the sautéed onion and leeks
  • Add the rest of the cut up cauliflower
  • Boil until the cauliflower is tender, turn off and set aside for 20 min to cool a little
  • Add to blender and blend for 1 to 2 minutes until creamy
  • Pour into bowls, add 1-2 tsp of the balsamic butter cauliflower topping and top with diced green onion

Serve hot and enjoy! 😋
