Lemon Chicken

Lemon Chicken (click photo for recipe in action!)

This Lemon Chicken was a big hit. Instead of using the conventional on this one, it goes into the broiler!

What you will need:

INGREDIENTS

Lemons and zest used in Lemon Chicken

3 lbs chicken breast or chicken of choice

4-6 lemons for zest, slices and juice

(Marinade)

1/4 cup extra virgin olive oil

1/4 cup lemon juice

1 1/2 tsp salt

1/2 tsp pepper

2 garlic cloves

1 tsp garlic powder

1/2 tsp crushed rosemary

1/4 tsp lemon zest

Directions

Mix marinade ingredients in a small bowl.


Cut 2 or 3 1/8-inch deep diagonal slits on the skin side of the chicken–this will allow the marinade to infuse.

Place chicken in a zipper storage/freezer bag or baking dish. Pour marinade over chicken. Add a couple lemon slices in with it.

 Seal bag and or cover dish and marinate for at least 1 hour but not more than 4 hours.

Cover 1-4 hrs

Preheat broiler on low setting (rack will be in upper postion) -OR- if your broiler has no hi/low setting, place rack about 4-inches below the heat source.

Place chicken, skin side down, on a broiler pan or use a rack placed in a baking sheet. If using chicken breast just place on cookie sheet and pour marinade over to cook in. I tossed a few lemons in to grill with the chicken which is optional.


Broil chicken for 20 minutes; turn and broil for an additional 15-20 minutes, or until done (juices will run clear)

Lemon Chicken with Rice and Cucumber Salad

Toss some lemons on top amd garnish with chopped cilantro, serve and enjoy!

P.S. something that complements this dish well is garlic, ginger guacamole! Add 1 tsp garlic powder, 1 thumb fine minced ginger, cilantro, onion, tomato, lemon zest, lemon juice, salt and pepper to your mashed avacados, dip the chicken in it and yum!
